Hydrogenated butter at Chilis?!
Hey i was wondering (actually, really wanted to know) if the butter they use at restraunts like Chilis and Ruby Tuesdays contains hydrogenated oils, because to me it tastes like margarine (and I'm used to smart balance/regular butter)!. Anyway thank you for any infoWww@FoodAQ@Com

I am a former chef and to make the butter go further we would take 4-6 pounds and soften it, then put in the large mixers and whip it to a creamy(er) consistancy, not other oils or flavours were added, it is done to allow butter either to spread faster, some places will use a piping bag to make fancy rosettes or pipe it into ramekins for individual service at tables, and when it is brought back to the kitchen after use, we would melt it, clarifiy it and use it to cook with, it was never reused for the dining room!.
Do not believe people who say there are chemicals or oils added, some may add a veg oil based maragrine to extend it, but they must tell you if they do so, ask them next time I beleive they will confirm my theorys!.Www@FoodAQ@Com
