Question: For those in hot weather, what's for dinner!?
I was going to make a casserole with leftover chicken, pasta, and asparagus, but I can't imagine turning on my oven in this heat!. More likely, I'll do stovetop quesadillas!.

I'm in Ottawa, Canada and it's about 40C degrees here with the humidity and my oven is not turning on for the rest of the week lol!. I'm having pasta salad!

You can use the chicken, pasta and asparagus in a cold pasta salad and just toss with mayo and your favourite herbs or give one of these recipes a shot:

Macaroni Salad
INGREDIENTS

* 16 ounces uncooked elbow macaroni
* 4 carrots, shredded
* 1 large red onion, chopped
* 1/2 green bell pepper, seeded and chopped
* 1/2 red bell pepper, seeded and chopped
* 1 cup chopped celery
* 2 cups mayonnaise
* 1 (14 ounce) can sweetened condensed milk
* 1/2 cup white sugar
* 1/2 cup white vinegar
* salt and pepper to taste

DIRECTIONS

1!. Bring a large pot of lightly salted water to a boil!. Add macaroni, and cook until tender, about 8 minutes!. Rinse under cold water, and drain!.
2!. In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery!. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper!. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours!. I usually make this a day ahead of time, and stir it occasionally to blend the flavors but you can make it same day and reduce the liquids!. The macaroni will absorb some of the liquid!.

Cool Garden Pasta Salad
INGREDIENTS

* 1 (16 ounce) package uncooked tri-color spiral pasta
* 1/2 cup thinly sliced carrots
* 2 stalks celery, chopped
* 1/2 cup chopped green bell pepper
* 1/2 cup cucumbers, peeled and thinly sliced
* 2 large tomatoes, diced
* 1/4 cup chopped onion
* 2 (16 ounce) bottles Italian-style salad dressing
* 1/2 cup grated Parmesan cheese

DIRECTIONS

1!. Cook pasta in large pot of boiling water until al dente!. Rinse under cold water, and drain!.
2!. Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl!.
3!. Combine cooled pasta and vegetables together in large bowl!. Pour Italian dressing over mixture, add Parmesan cheese and mix well!.
4!. Chill for one hour before serving

Enjoy and drink lots of water so you don't get dehydrated!

Actually, I cut slices of water melon and chill it in the refrigerator!. And when I am ready to eat pull out some chilled cold slcies of yummy feta cheese and put some watermelon on the plate and that is breakfast, lunch & dinner for me on a blazing day like this!.

alot of times when I'm too tired or too hot I'll have breakfast for dinner!. Mainly cereal and toast! Or scrambled eggs!.
It's a trick my mom used to get us kids excited about and I still do it to this day!Www@FoodAQ@Com

It is hot here so we are having leftover meatloaf, mashed potatoes and carrots that can just be heated up in the microwave and some crusty Italian bread with butter!. For dessert, fresh fruit!.

Well when it is too hot I throw together a Fruit salad and some cold spagetti with a Red Pepper sauce and throw some burgers on the Grill so I dont heat up the House with the Oven!.!.!.!.!.!.!.Www@FoodAQ@Com
