What is the difference between Fondant & Gum Paste?!


Question: What is the difference between Fondant & Gum Paste!?
Answers:
As a former chef and hvaing used and made both product there is a vast difference, Fondant is a cooked sugar and glucose mix which is then molded or knead into a creamy white mass, it can be rolled like pastry or liquidized and used like chocolate in a dipping form!.

Gum Paste is a mixture of cornstarch, icing sugar, glucose and either gelatin or gum arabic or the Wilton Gum paste mix, it is more like the old fashion "Playdough" we had as children is can be coloured and modeled into flowers, borders, leaves, and other pieces for decorating cakes and wedding cakes, you can air brush both dried fondant and gum paste objects, fondant is stable a room temparture but can sweat at higher temps, once gum paste has hardened it is rock solid!.
