Mangoes are harvested when a farmer is sure they will ripen off the tree ,export destined fruit are harvested earlier than those for local markets !.
The colour of a ripe mango depends on the species,it can range from a light blush at the stalk end of the fruit to a vivid yellow or orange & a range of shades in between!.The feel of the fruit changes when ripe, from firm to a slight 'give' when gently pressed

It depends on the species of mango!.
Some mangos are ready when they are still hard to the touch!. Color definitely helps!. A little green can still mean its ready!. It all depends on how you like to eat it too!.Www@FoodAQ@Com
