Will venison leg steaks be tender?!


Question: Will venison leg steaks be tender!?
what is the "usual" cut of venison one gets in a steak (or fillet or whatever) is it the leg!? ive found somewhere to buy venison leg steaks but i dont know if the tender venison fillets i had before were from the leg!.!. i tend to think of leg meat as "not so nice" would it still be a tender cut!? thanks!Www@FoodAQ@Com

The leg of venison or any animal for that matter is very tough!. they walk around all their life and therefore have developed a strong muscle which in turn signifies tough meat!.

You might have had a fillet from the tender loin which sits under the rib cage which is a muscle that never gets worked!.

Here's what you do!.
with a leg shank sear it on all sides and then braise it (with liquid ) in the oven at a low temp maybe 300 f for about 1 to 1 1/2 hour!. you can also use a grill, it may take longer

with a fillet you can grill or sear it on a stove top!.

And don't forget to season with herbs and spices, or it will taste gamy!.Www@FoodAQ@Com

for the usuall cut that everyone gets for a steak will be a piece cut from the backstrap wich is in the loin area, venison leg steaks will be a slight bit tougher, just remember any meat on venison, beef or pork will be more tender from parts of the body that are not used as much, even though all meat is muscle, any meat from the legs which is always used to carry an animal will be tougher because it is muscle that is used in movement and support of the animal so it will be a slight bit tougherWww@FoodAQ@Com

Tednerloin filets come from a mouscle on the back!. Leg cuts tend to be a lot tougher!. They are good for slow cooking techniques like stewing or baising!.
