What happened to my eggplants?!


Question: What happened to my eggplants!?
I had 2 eggplants in fridge but they froze( the temperature was not right)!. Then I put them in other fridge!. Then I saw they looked weird: light purple colour, soggy, blistery skin!.
I throwed them away!. What happened!?Www@FoodAQ@Com

It sounds like they indeed froze so solidly they went mushy because the cells broke down by expanding ice crystals!. You were right to try not to salvage, they were only good for the compost bin!.Www@FoodAQ@Com
They rotted!. That tends to happen to vegetables! Buy more!Www@FoodAQ@Com
