Whats a good brand of mayo that wont break down in a salad?!
when i make cole slaw,broccoli salad or any other mayo based dressing for a cold salad it breaks down if mixed to far in advance!.We love to bbq and enjoy cold veg!. salads as a side dish but find that if they are made to far ahead in the day (morning) they are very watery by dinnertime!.is this a reaction to the vinegar or a problem with the brand!? have tried hellmans,dukes,kraft and most store brands!.any ideas!?Www@FoodAQ@Com

The Bama brand is the one I prefer for taste, but the mayo is not the problem!. It's the water in the veggies draining out, especially if you add salt or sugar to the mix!. This pulls out the water and mixes with the mayonnaise making a milky looking solution that makes things soggy!.
also, I've began washing the vegetables and covering them top and bottom with paper towel to drain and dry them!. Keep your tomatoes, onion and other veggies in a separate container until time to serve and then, mix it with mayonnaise or other dressing!.Www@FoodAQ@Com

It isn't the mayo that is your problem!. When you dress veggies in advance, the dressing draws out the moisture in the vegetables and mixes with the mayo making it appear watery!. Try making potato or pasta salad!. They can both be made ahead of time and actually taste better when they sit in the fridge over night!.Www@FoodAQ@Com
