I am a former chef and if your turned off by the supermarket variety, then do not go to an Italian specialty store and get a wiff of the 10/20 and 25 yr old ones, I live here in Toronto Canada and one of my haunts, an Italian gourmet specialty store brings in some older aged at time, they have to keep it in a sealed room or the whole store would reek!.

I know like limburger it is a bit hard to handle, but for me the older and stinkier the better, I have cheese from around the world and worked in alot of international places and you have not seen or smelled the worst yet, believe me, there are some much worse!.Www@FoodAQ@Com

I was never able to eat parmesan cheese (because of the very smell you mention, which I'm not sure everyone smells the same way) until I found out about *fresh* parmesan --which doesn't smell or taste at all like the horrible stuff in the green can or the little packets at pizza places, etc!.

Now I eat a lot of parmesan!.

I used to buy the pre-grated fresh parmesan that comes in a plastic tub, then keep it in the freezer and just take out whatever I needed at a time!. Now I just buy a wedge of parmesan (usually Reggiano, which is more expensive but is very good and lasts a curiously long time) and keep it in a ziptop bag in the freezer---then just grate off whatever I need at a time!. I use a microplane grater just for topping veggies or spaghetti, e!.g!., or food processor if I need a whole lot for some reason!.

Strangely, the smell of hard crusty brown cheddar cheese or other cheeses that might be used on macaroni and cheese also smell a lot like that to me, and I literally can't be in the same room with mac and cheese which is being baked *uncovered*!. Go figure!.!.!. must be a biochemistry thing!.
