Strictly speaking, grits are finely cracked corn and meal is coarsely ground flour!. In practice, the two terms are used inter-changeably with local convention dominating!.

As to who invented them, they have been around practically as long as corn (maize if you prefer) has been cultivated, nearly 7000 years!. Neither corn nor its grassy predecessor, teosinte, can be easily chewed when mature without some level of grinding or cracking!. Corn evolved in central America, and then spread both southward into Peru and northward into what is now the U!.S!. and Canada!. The first meal the white man shared with the Indians at Jamestown VA in 1607 included white grits as noted by several of the diaries of people who attended!. And Governor Bradford of the Plymouth Colony stated that without the "corne" the Indians had introduced them to, he didn't know how they would have survived!.
