If you use King Edwards potatoes, you don't need to par boil them (they cook quickly)!. Peel and quarter the potatoes (or cut smaller if they are large), coat in hot fat (veg or olive oil, or meat fat from the Sunday joint if you're doing a roast)!. Roast in a hot oven uncovered for 40 minutes!. Take the tin out and turn the potatoes or shake the pan to move them a couple of times while they cook and add more oil if they look dry!.
It depends on your oven - they may cook quicker, or take a little longer than 40 minutes!.Www@FoodAQ@Com
