My favorite biscuit, or as well call them here in the US, is one I make myself - it is an Oatmeal Coconut cookie that I sometimes dip 1/2 way in chocolate and then let the chocolate harden!. They are crispy on the edges and chewy in the center!.
By the way, also love a good, proper, Scottish shortbread - they are so good dunked in Hazelnut, Irish Creme or French Vanilla flavored coffee!.

CORELLIAN COCONUT OATMEAL COOKIES DIPPED IN CHOCOLATE - Wedge
1 cup Flour
1 tsp Baking Powder
? tsp Baking Soda
1 tsp Salt
? cup Butter, softened
1 2/3 cup Sugar
2 Eggs – large or bigger (I prefer to use Jumbo)
1 ? tsp Pure Vanilla Extract
2 ? cup Quick Oats
1 cup Flaked Coconut
16 oz Milk Chocolate - Melted (I prefer Droste a Milk Chocolate candy bar from Holland) - optional
Preheat oven to 375 F!.
Stir together flour, baking powder, baking soda, and salt; set aside!. Cream together butter and sugar until light and fluffy!. Beat in eggs one at a time!. Stir in flour mixture, vanilla and oats!. Add coconut!. Bake for 10-15 minutes, or until lightly browned at the edges!. Cool on a wire rack!. One cool dip half of each cookie in the melted chocolate and let harden!. Makes about 60 cookies!. In america biscuit's aren't cookies!. I've got a raggedy envelope that I jotted a biscuit recipe on a long time ago, and it's a sure thing every time I make them!. They turn out great, whether I choose to drop them, or to put them in a pan and cut them ahead of time!. They also work great as dumplings in chicken and dumplings!.

I live in the US!.!.!. We really only have like 3 different types of biscuits!.!.!. Buttermilk, Flaky, and Homestyle!. We use them usually for breakfast- like with eggs n bacon, or with gravy!.!.!. or with dinner!.
