Are there any vegetables or foods that taste like potatoes?!
Potatoes are good, yes, but they are harmful for people with diabetes (Type 2)!. I was wondering if there are any vegetables that taste just like potatoes without the loaded starches!. Perhaps there is a way of preparing potatoes that would remove the starches!.Www@FoodAQ@Com

Hey, I use cauliflower!! Cook it til just tender then use your favorite potato salad fixings to finish!. It is a little different, but really good!.
A little experimentation with cauliflower will give you bunches of ideas! Grated cauliflower, then cooked a bit and mashed with a dab of butter and cream tastes like mashed potato or at least gives you the attitude of having potato!.Www@FoodAQ@Com

I seen a recent article about potatoes, corn and bananas and that they are more beneficial than once thought from a study!. They are resistant starches and we actually do better including them in our diet!. Look into resistant starch and potatoes and you may be suprised!.Www@FoodAQ@Com
Parsnips have a texture a lot like potatoes when cooked!. They can replace potatoes in stews, be mashed like potaotes, or be cut thin and made au gratin, and maybe you'd never know the difference!. But they don't *look* like potatoes so whole may not work so well!.
