Finger Sandwich Search?!


Question: Finger Sandwich Search!?
I am looking for old-school style finger sandwiches!. But all I find when I search is gourmet this and that!.!.!. I just want yummy little bite-sized sandwiches!. Does anyone know of a catering company in West LA or Santa Monica that makes old fashioned finger foods!?Www@FoodAQ@Com

Apple Chicken Tea Sandwich

2 chicken breasts, cooked and shredded
1/2 cup walnuts, chopped small, but not fine
1 granny smith apple,peeled, cored and chopped small
1/4 cup cheddar cheese
mayonnaise
salt to taste
Any kind of whole wheat bread, thinlu sliced with crusts removed

Combine chicken, walnuts, apples, cheese, salt and enough mayo to make the mixture spreadable!. Spread over the bread and cover with a slice of plain bread!. Cut each sandwich into 4 triangular pieces!.!.!.!.!.!.!.!.!.!.Enjoy

Pineapple sandwiches!.

2 cups crushed pineapple, drained
3/4 cup sugar
1 cup nuts chopped(pecans, walnuts or almonds)
8 ounces cream cheese
1-2 tablespoons milk
24 sliceds sandwich bread, sliced thinly ( cut out hearts from cookie cutter works great)

Let cream cheese come to room temperature!. In a saucepan combine pineapple and sugar, bring to a boil, cook until thick stirring constantly!. Cool , stir in nuts!. In a bowl combine softened cream cheese with enough milk to make a good spreading consistency!. Combine with pineapple mixture!. Just before serving spread on bread and top with another piece and trim off crusts!.

Cucumber Tea Sandwich
1/2 seedless cucumber, peeled and very thinly sliced (about 32 slices)
1/2 cup unsalted butter, room temperature
1/2 cup coarsely chopped watercress leaves
16 slices best-quality white bread
Salt to taste
1/2 cup alfalfa sprouts

Place cucumber slices between layers of paper towels to remove excess moisture!.

In a small bowl, combine butter and watercress; spread on one side of each slice of bread!. Lay cucumber slices onto the buttered side of 8 slices of bread!. Sprinkle with salt!. Cover each with 1 tablespoon alfalfa sprouts and top with the remaining slices of bread, buttered side down!.

Carefully cut the crusts from each sandwich with a sharp knife!. Cut the sandwiches in half diagonally and then cut in half again!.

Yields 8 whole sandwiches or 16 halves or 32 fourths

Walnut Tea Sandwich

1 1/2 (8-ounce) packages cream cheese, room temperature
1/2 cup ground toasted walnuts
2 tablespoons finely minced fresh parsley
1 tablespoon finely minced green bell pepper
1 tablespoon finely minced onion
1 teaspoon fresh lemon juice
1/4 teaspoon grated fresh nutmeg (or more to taste)
Salt and white pepper to taste
24 slices best-quality white bread
1/2 cup unsalted butter, room temperature

In a large bowl, combine cream cheese, walnuts, parsley, and bell pepper!. Add onion, lemon juice, nutmeg, salt, and pepper; stir until well blended!.

Spread one side of each piece of bread lightly with butter!. Top the buttered side of 12 slices of bread with some of the cream cheese mixture and top with the remaining bread slices, buttered side down!.

Carefully cut the crusts from each sandwich with a sharp knife!. Cut the sandwiches in half diagonally and then cut in half again!.

Yields 12 whole sandwiches or 24 halves or 48 fourths!.Www@FoodAQ@Com
