I am a former chef and live in Canada, I have spoken with a number of producers and from the time they are laid and processed, it is around 6-9 days and they have a shelf life of 30-60 days, that is why the carton have a use before date, but you can freeeze eggs, it is best to separate them and freeze the yolk and white separately, for the grocery store expect them to be at least 7 days old to 14 days old when they arrive,and that depend on the city your in, and how they move in the supermarket you shop in or at!.Www@FoodAQ@Com

Hard to say when they come from the farmer to the store!.!.!.!.!.!.!.!.!.I doubt if even the store is aware of when, other that the fact of the date on the side of the carton!?!?!?Www@FoodAQ@Com

as long as u eat them before the date on the carton who cares!. did u know there really is a chicken embro in each egg u comsume,nasty right, thats why they keep them cold from the time they take them from the hen to the time u eat them!.Www@FoodAQ@Com

I read in book called "Fit For Life" that many eggs sit in a warehouse for at least a month before they are shipped to stores!. I don't know if this is true or not, but I wouldn't doubt it! If you get a chance, you should really read this book!. It's very insightful!. It's written by Harvey Diamond!.Www@FoodAQ@Com
