Because the chlorophyl present in the cucumbers is green to the human eye receptors!. During the brining process to make the cucumbers into pickles, the chloroplasts in the chlorophyl go through a chemical reaction thus making the entire pickle green!. That's the scientific explaination!.!.!.!.!.!.

also alum is added to some which does help retain the colour and add the crunch you get when biting into a pickle, some are artificially colour in the process, but not all, those neon green gherkin are, but most sweet mixed pickles are not, now pickle relish is another story, I have made pickle in many of the country I was a chef in, I will not brag, but I put the other two chefs to shame with my background!.Www@FoodAQ@Com

cumcumbers start our green, mostly on the outside and pale green to white on the inside!. the vinegar deepens the green color due to its acidity!.

buy red cabbage
In one bowl mix vinegar and water
In the other mix baking soda and water
put in some of the cabbage into the vinegar mixture it will turn magenta!.
Next put some cabbage into the bowl with baking soda!.

Alot of the time pickles are cooked in their brine, and brief cooking sets the chlorophyl in the pigment of green vegetables!. Thats why barely cooking things like asparagus or green beans actually makes them brighter!.Www@FoodAQ@Com
