marinated in brine, often containing garlic, peppercorns, cloves, etc!.; preserved or cured with salt: corned beef!.

It's nothing to do with corn, rather the process of brining to make it using a large grained salt--pickling salt!.

And, yes it actually is beef-- it's a from the brisket!.

Yes it is beef!. lol!. ( made from a brisket of Beef)!.
It was coined " corned" many years ago!.
They used very couse salt that resembled corn kernels!.
