real caviar is the roe ,or eggs ,from sturgeon that live in the caspian sea in russia,they are salted and some is smoked and /or dyed to a certain color !. the best caviar is called "sevrugga " and sells ,in this country(usa) for as much as $375/pound ,the next grade down is called "bellugga" and only fetches about $175 to $200 a pound ,alco there are several caviar -like products out there that can be had at the local grocery store these include "lumpfish" and "salmon " and both come either red or black,where as the real deal comes usually au naturel,or the same color it was in the fishWww@FoodAQ@Com

only the eggs from these three types of sturgeon fish can be called Caviar!.
