Valrhona (French) is universally reconised as the best couvature chocolate for cooking!. As for just eating, the best world brands are Godiva (Belgian), Neuhaus (Austrian or German), Lindt/Sprungli and Teuscher (both Swiss)!. And there's one more Belgian one that I've forgotten!.Www@FoodAQ@Com
