Does salmon taste better when it is wholly smoked or partially smoked? Is there a difference?!
Answers:
lol!.!.!. well, i once dated a 20 year old chain smoker and her fish always had this partially smoked flavor!. I threw up in my mouth the first time I tried it, but I kept eating!.!.!. I knew it meant a lot to her!. generally I think it's best to avoid the smoke and let the fresh, natural flavors come out!. If the fish is really fishy, or stale, or has that whitish film on the edges, it will need something!.!.!. I think i just threw up againWww@FoodAQ@Com
It's a matter of preference, but the real difference is between being cold smoked or hot smoked!. You can google this up, but cold smoking is done below cooking temperature and results in a supple, pink, oily flesh that's thinly sliced to enjoy, and I think it's a delight!. Hot smoked salmon is cooked, so it has a consistency similar to salmon out of a can (hardened and flaky like tuna fish), but is smoky flavored!. In both cases, they've been through a salt curing process, then sugared and dried to seal the surface before smoking!.Www@FoodAQ@Com
I think maybe you mean hot smoked versus cold smoked!?
The only difference is personal taste- they both are fine!.
The difference is that hot smoked tastes more like cooked salmon because it is cured in a hot smoker, where cold smoked temperature is lower!. You can also do both at home, in your oven or in your fridge!.
So yeah, it's just a matter of personal taste!. I personally prefer cold smoked flavour myself!.Www@FoodAQ@Com
