It's made from whatever part of the animal you don't see in a package (steak/chop/roast)!.
That's why they say there's nothing wasted on a pig -- if it's not a roast/steak/something recognizable, it gets ground into a casing w/some spices and maybe fillers - voila! Sausage!Www@FoodAQ@Com

I've seen sausages being made in the country!. All sorts of bits and pieces from the dead pig are thrown into a pot to boil up with flavourings after the pig has been hung up to allow the blood to drain out!. Of course big manufacturers will add all sorts of yucky preservatives to the mix, as well as water: the main ingredient in many commercial meat products!!Www@FoodAQ@Com

as the large cuts of meat roasts and steaks are processed ,, there is still a large amount of the SAME PRIME meat left
that is cut into the smaller things like stew meat and stir fry
the left over here continues for many various of the sausages!.
The nonsense starts here when the biased and bigots try to slur the effort for thrift!.!.
They make derogatory remarks as if the muscle in the jaw is less prime than the rib eye!.!. or bring up pigs snouts and ears tails and - - "show me the meat fools"
this remaining meat is then ground into many recipes to make the lunch meats and mixed for the hundreds of sausages!.!.
any thing left here is collected and sent to rendering for another hundred of products for food medicines gelatin and glue etc!.!.!.!?!?!?Www@FoodAQ@Com

it depends if its expensive and stuff like that but just regular sausage u can find for cheap is like a hot dog, the parts of the animal that people would not want to buy if they told you what it was!. u can ask ur local butcher for sausage made from whatever kind of meat u want, he can make it for u, mine does!.Www@FoodAQ@Com
It depends, if u buy gourmet stuff, then its all good meat ie the muscles, but ordinary sausages are just all the left over bits, like the toungue, hoofs etc, ground up, and the casing is made of intestine!.Www@FoodAQ@Com
