I know of a certain italian sausage that gets substantially larger when heated up!. We should meet up some time and I'll give you a demonstration!.Www@FoodAQ@Com

I believe the "plump" is due to the water in the hot dog turning to steam and creating pressure!. Some people love that "pop" when they first bite in to a hot dog!. With respect to Oscar Meyer dogs, I think it is probably due to the type of casing that they enclose the meat in - it doesn't allow much of anything to permeate it!. Pasta and grains plump, or expand, because they absorb water during the cooking process!.Www@FoodAQ@Com

Grains of rice plump up when you cook them, as do most grains!.Www@FoodAQ@Com
