The best grilled fish recipe that I have ever had is the following:

Marinate salmon filets in 3 parts maple syrup (buy the real stuff, not the sugary maple-flavored substitutes) and 1 part soy sauce!. Normally, for two filets I use about 1 cup maple syrup, 1/3 cup soy!. Enough to smother the fish in a zip lock bag!. You should marinate this overnight if possible, but at least a few hours!.

Grill the fish with the skin side down at a medium temperature!. When the salmon is done, you should be able to lift the fish off of the skin with a good grilling spatula!. The skin will stick to the grill!.

Serve with wild rice and grilled asparagus (coat the asparagus with olive oil and a little salt, grill until slightly charred)!. I have made this fish many times when we're hosting a party!. And I always have to write down the recipe for our guests! (Normally for the asparagus too!)Www@FoodAQ@Com
