Makes 2 servings

A refreshing summer drink for coffee lovers!.
3/4 cup strongly-brewed Coffee
2 cups chocolate ice cream
1 tsp Double Strength Vanilla
1/2 tsp Cinnamon
Crushed ice, if desired

Place coffee, ice cream, Vanilla & Cinnamon in blender container!. Process until smooth!. Serve over crushed ice or top with whipped cream!.

CINNAMON ICE CREAM

2 tbsp!. Calvados or apple jack
6 drops cinnamon oil
1/4 tsp!. vanilla
1 1/2 c!. whipping cream
1/2 c!. sugar
1/4 c!. water
5 egg yolks
8 mint sprigs

Combine Calvados, oil and vanilla in small cup!. In mixing bowl beat cream to soft peaks!. Refrigerate!. In saucepan heat sugar and water until sugar is dissolved!. Increase heat to boil to 239 degrees, soft stage!. Meanwhile, beat yolks until thick and light, add hot syrup while beating at low speed!. Increase speed to high and heat until thick and cool!. Fold in Calvados mixture then fold in whipped cream!. Transfer to ice cream machine and follow manufacturer's instructions!.

Apple Raisin Cobblestone Bread
Yield: 1 loaf (12 servings)

Bread:

1/2 cup chopped apples
1/4 cup raisins
1 tablespoon Watkins Apple Bake
4 teaspoons Watkins Cinnamon
2 pks (11 oz) refrigerated dinner rolls
4 tablespoons butter or margarine, melted

Glaze

? cup powdered sugar
2-3 teaspoons milk

Preheat oven to 375F!. For bread, combine apples, raisins and Watkins Apple Bake Seasoning in a small bowl; mix lightly!. In a separate bowl, combine Watkins Cinnamon & sugar!. Unroll dough; separate into 16 rolls!. Using kitchen shears, cut each roll into quarters!. Place half of the dough pieces and half of the butter in batter bowl; toss gently!.

Sprinkle with half of the sugar mixture; toss to coat evenly!. Place dough pieces in loaf pan to cover bottom of pan; sprinkle with half of the apple/raisin mixture!. Repeat layers!. Bake 40-45 minutes or until lightly brown; cool in pan 15 minutes!. Loosen bread from edges of pan; remove to cooling rack!. For glaze, combine powdered sugar and milk in small bowl; drizzle over warm loaf!.

CINNAMON-NUT SWIRL ICE CREAM

1 c!. light cream
1/3 c!. sugar
2/3 c!. maple syrup
2 tsp!. vanilla

Heat cream, sugar and syrup in heavy pan, stirring until sugar is dissolved!. Stir in vanilla!. Chill and add:

1 c!. light cream
1 1/2 c!. heavy cream
1/2 c!. milk

Put in freezer and process!. When ice cream is almost done, add cinnamon-nut mixture!.

CINNAMON-NUT SWIRL MIXTURE:

1/2 c!. maple syrup
1 c!. chopped walnuts
1/2 tsp!. cinnamon

Bring syrup to a boil in small, heavy saucepan!. Boil 2 minutes!. Pour into bowl, add nuts and cinnamon!. Stir vigorously!. When mixture is thick and gooey, spread on a pan and refrigerate!. Add to ice cream just before it's done

CINNAMON CHEESECAKE

1 lb!. cream cheese, softened
1 1/2 c!. sugar
3 eggs

Beat cream cheese until fluffy and add 1/2 cup sugar and eggs, one at a time!. Beat until smooth and pour into prepared crust!. Bake in pre-heated oven 15 to 20 minutes at 350 degrees!. Cool 10 minutes!. Ground cinnamon 1 tsp!. vanilla 3 c!. slivered almonds or chopped nuts

Combine sour cream with last 1 cup sugar and vanilla!. Spoon over cooled cheesecake!. Dust with cinnamon and cover with nuts!. (I like to use chopped walnuts and mix together with cinnamon)!. Return to oven and bake 10 minutes!. Cool then chill 12 to 24 hours!.

CRUST:

2 c!. graham cracker crumbs
1/4 c!. sugar
1/2 c!. butter

Blend and put into spring form pan!. Bake 5 minutes at 350 degrees!. Cool before filling!.

APPLE CINNAMON CHEESECAKE

1/2 c!. plus 1 tbsp!. butter, softened and divided
1/4 c!. firmly packed brown sugar
1 c!. unsifted flour
1/4 c!. quick-cooking oats
1/4 c!. finely chopped walnuts
1/2 tsp!. ground cinnamon
2 (8 oz!.) pkg!. cream cheese, softened
1 (14 oz!.) can sweetened condensed milk
3 eggs
1/2 c!. frozen apple juice concentrate, thawed
2 med!. Golden Delicious apples, cored, pared, sliced
Cinnamon Apple Glaze

Preheat oven to 300 degrees!. In small bowl, beat 1/2 cup butter and sugar until fluffy!. Add flour, oats, nuts and cinnamon; mix well!. Press firmly on bottom and half way up side of 9-inch springform pan!. Bake 10 minutes!.

In large mixing bowl, beat cheese until fluffy!. Gradually beat in sweetened condensed milk until smooth!. Add eggs and juice concentrate, mix well!. Pour into prepared crust!. Bake 45 minutes or until cake springs back when lightly touched!. Cool slightly!.

In large skillet, cook apples in remaining 1 tablespoon butter until tender-crisp!. Arrange on top of cheesecake and drizzle with Cinnamon Apple Glaze!. Chill thoroughly and refrigerate leftovers!.

CINNAMON APPLE GLAZE:

In small saucepan, combine:

1/4 c!. frozen apple juice concentrate, thawed
1 tsp!. cornstarch
1/4 tsp!. ground cinnamon

Mix well!. Over low heat, cook and stir until thickened and clear!. Add a few drops of red food coloring, if desired!.

Sopapilla Cheesecake Recipe

2 cans refrigerated crescent rolls
2 8 oz pkg!. cream cheese
1 cup sugar
1 stick butter
Cinnamon/sugar

Press 1 can crescent rolls in bottom of a 9x13 pan!.
Whip softened cream cheese and 1 cup sugar, spread over crescent roll layer!.
Top cream cheese layer with second can crescent rolls
Melt 1stick butter and pour over top
Sprinkle with cinnamon sugar (mix sugar and cinnamon, to taste)

Scrumptious Cinnamon Nut Coffeecake

Topping:
1 cup (3 7/8 ounces) pecans or walnuts, chopped or ground
1/2 cup (3 1/2 ounces) packed brown sugar
2 teaspoons cinnamon

Batter:
3 cups baking mix
1/2 cup (3 1/3 ounces) sugar
1 1/3 cups (10 3/8 ounces) milk
2 large eggs

Preheat your oven to 350°F!. Put the mix in a mixing bowl!. Blend in sugar!. Beat the egg with the milk and stir gently into the mix, taking only 20 seconds!. This is important!. No matter how lumpy, resist the temptation to stir until the lumps are gone!. You'll wind up with tennis balls if you don't!.

Grease the bottom and sides of a tube pan!. Put about 1/2 the batter in the bottom!. Sprinkle 1/3 of the topping over this and swirl it in gently with a fork!. Put the remaining batter on top and sprinkle on another 1/3 of the topping!.

Bake for 25-30 minutes, until a cake tester inserted in the center comes out clean!. Let the coffeecake cool for about ten minutes after it has baked!. Turn it out onto a serving platter, sprinkle on the remaining 1/3 of the topping and serve!.

Marbled Cinnamon Sugar Quick Bread

You will not believe how scrumptious this quick and easy bread is!. Store it wrapped overnight before slicing!. Yield: 12 servings, 1 loaf

1 1/3 cups sugar, divided
2 tsp ground cinnamon
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 egg, beaten
1 cup milk
1/3 cup vegetable oil

Preheat oven to 350° and grease and flour a 9x5x3" loaf pan!. Mix 1/3 cup sugar and cinnamon together and set aside!. Combine flour, baking powder, salt, and remaining 1 cup sugar in a large bowl!.
Combine egg, milk and oil and add to flour mixture!. Stir by hand just until moistened!.
Pour half the batter into prepared loaf pan!.
Sprinkle with half the cinnamon sugar mixture!. Repeat with remaining batter and cinnamon mixture, then draw a knife through batter to marble!. Bake for 45- 50 minutes or until a toothpick inserted in center comes out clean!. Cool in pan for 10 minutes, then remove and cool on a wire rack!. Wrap and store bread overnight before slicing!.!.!. if you can wait that long!.

1? cups sugar
? cup butter or margarine, softened
? cup shortening
2 eggs
2 3/4 cups all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
? tsp salt
? cup sugar
2 tsp ground cinnamon

1!. Heat oven to 400oF!.
2!. Mix 1? cups sugar, the butter, shortening and eggs in large bowl!. Stir in flour, cream of tartar, baking soda and salt!.
3!. Shape dough into 1?" balls!. Mix ? cup sugar and the cinnamon!. Roll balls in cinnamon-sugar mixture!. Place 2 inches apart on ungreased cookie sheet!.
4!. Bake 8 to 10 minutes or until set!. Remove from cookie sheet to wire rack!.

Cream Cheese-Filled Cinnamon Rolls

5 to 6 cups all-purpose flour
1 (18!.25-oz) package white cake mix
2 (1/4-oz) envelopes rapid rise yeast
2 cups warm milk (100° to 110°)
2 eggs, lightly beaten
1/2 tsp!. salt
1 (8-oz) package cream cheese, softened
1/2 cup sugar
1 Tbsp!. ground cinnamon
1/2 cup chopped pecans
1 Reynolds Pot Lux Cookware Pan With Lid (1 1/2-quart size)
1 Reynolds Pot Lux Cookware Pan With Lid (9- x 12 1/2-inch size)
Vegetable cooking spray
Frosting

Preheat oven to 350oF!. Stir together 4 cups flour, cake mix, and next 4 ingredients in a large bowl; gradually add enough remaining flour to form a soft dough!. (In our Test Kitchens, we used an additional 1/2 cup on a heavily floured surface; more may be used!.) Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 6 minutes)!.

Roll to a 12”x20” rectangle, and spread with cream cheese!. Stir together sugar and cinnamon, and sprinkle over cream cheese; sprinkle with chopped pecans!. Roll up, jellyroll fashion, starting at one long edge!. Cut into 1-inch slices!. Coat pans with cooking spray; place slices in pans!.
Cover and let rise in a warm place (85 degrees), free from drafts, 15 minutes!. Place each pan in center of a baking sheet!.

Bake, uncovered, at 350F or 15 to 25 minutes or until lightly browned!. Remove baking sheet with pan from oven; spread warm rolls with Frosting!. Let pans stand on baking sheet 2 minutes before removing!.

Note: To make ahead, freeze unbaked cinnamon rolls!. Thaw completely, and bake rolls as directed!.

Yield: Makes 12 to 15 servings
