I am a former chef from Canada and it tends to be so much richer than the skim milk variety and the type of cultures they use do allow the lighter whey yougart to sink and the creamier solid to rise up, like the old cream bottles in the 40's/50's and 60's, that we over 45 got delivered to our doors by the milkman, most do not remember the milkman and the glass bottles we used to get milk in!.
I to use whole milk yougarts, I am a lacto-ovo vegetarian (I know Zora), and here in Toronto, Canada, I am sort of spoiled with all the ethnically made or style yougarts, I use mostly Whole milk Balkan or organic with a combo of acidophilis or the newer lactecia culturesWww@FoodAQ@Com
