Ok the reason that happens is because when you buy the icecream it has little bubbles of air in it which keep it cold, as it warms, the bubbles release the air in them and the icecream melts a little bit, hence making it scoopable!. When you refreeze the icecream, there are no new bubbles in the ice cream so it gets harder, and if you've ever noticed more difficult to scoop as you get the the bottom of the container!.!.!.Www@FoodAQ@Com

If the ice cream melts too much then once refreezed it will form ice particles and be hard!. This is why you should NEVER under ANY circumstances microwave the ice cream before scooping it out!.

I'm thinking your freezer temperature is too cold!. Make sure your freezer setting is set to the 'ideal' or 'recommended' setting!. also, make sure the ice cream is the last thing you grab at the grocery store and the first thing to go in your freezer!.

If this is a major issue, I've seen at my grocery store the hot/cold bags, it keeps your ice cream colder until you get home!.Www@FoodAQ@Com

I only buy BREYER's ice cream, which is all natural (sugar, cream & flavoring)!. It stays consistently smooth, and easy to scoop throughout the container!.!.!.!. All other ice creams have a ton of chemicals and preservatives in them (read the labels)!. So, when the container is opened, those artificial ingredients may react with the air to get hard; and they will also form a "gummy" coating on top sometimes too !.!.!.!.Switch to Breyers!.!.!.!.!.!.Www@FoodAQ@Com

Maybe it dries up a little, esp!. if it's not well covered!.
Or maybe your freezer is colder than the shop's, so it ices much better!. Sometimes shops have so many bags and containers of frozen foods, with people opening and closing the freezers frequently, that the ice cream is at a higher temperature than optimal!.Www@FoodAQ@Com

The ice cream softens up on the way home from the store!. If you have trouble scooping it out, do what the ice cream stores do!. Heat up some water in the microwave and put your scoop in it and get it hot!.Www@FoodAQ@Com

It's a matter of taking off a part of the "outer layer" and exposing the "inner layer", therefore making it easier for cold to penetrate it!.Www@FoodAQ@Com

I think it is because your freezer is set at a higher temp than the case at the market!.Www@FoodAQ@Com

Maybe because the ice cream melts a little then re-freezes so it's harder as it has more ice!?Www@FoodAQ@Com

It's not meant to be soft like that!.!.!.!. That's life, I guess!.!.!.sometimes hard, sometimes soft!Www@FoodAQ@Com

What's wrong with microwaving ice cream!?Www@FoodAQ@Com

You have that much left!?Www@FoodAQ@Com
