actually preserves has more chunks of fruit in it!. jam has less and jelly has none, the texture is different and jelly has more sugar than the both of them!. preserves has the least of the three and it is less processed and is thus, more natural!.
so here is the break down
Jelly - is made from fruit juice - no fruit pieces
Jam - is made with small pieces of fruit and sometimes fruit pulp!.
Preserves - is made with large or whole pieces of fruit!.
