Why does the garlic keep turning green?!
Why does the garlic I use keep turning green when it's mixed with olive oil!? In Australia all the garlic is grown in China - it's only been happening that I've noticed in the last 2 or 3 years!. It doesn't seem to affect the flavour, but it looks terrible in skordalia or other dishes - like there's mould spots!Www@FoodAQ@Com

Usually it is oxidation, and when mixed with Olive oil causing a chemical reaction, grow your own, and tons of Aussie garlic out there!.Www@FoodAQ@Com
