Once lemon salt has been opened, store it in the refrigerator!. After 1 week it begins to lose its freshness!. As for your 3-year-old stuff, toss it!.!.!.along with any other herbs, spices & seasonings you haven't used in over a year!. Replace it with store bought, or learn to make your own lemon salt!.!.!.then you'll only make what you will use for a specific recipe!. Lemon is citric acid and it shouldnt go bad unless it was opened then i wouldnt suggest using itWww@FoodAQ@Com
