Can you use wine to burn the top of creme brulee?!


Question: Can you use wine to burn the top of creme brulee!?
Does it taste different or bad!? Does it work!? Is there any danger!? Is it easy to stop!?

you need to use sugar hun!. If you use wine you run the risk of burning your house down!. sugar's fire will go out but wine is alcohol so it will burn longer!. unless u wanna have to stick your creme brulee under water i'd go with sugarWww@FoodAQ@Com

I asume your going to do a flaming Creme brulee such that when you present it, it's on fire, carmalizing the sugar below!.

Wine does not have the alchohol content to burn at the lower temps you need in order to crust a creme brulee!.

You should stick w/ alchohols that are high proof, but you "COULD" mix something like a little wine w/ some 151, or some Kahlua or something!.!.!.

Sugar is typically blown w/ a torch, and will need to be there as a base either way, but what you mix w/ that I guess you could use a wine and sugar mix and flame that w/ a torch!.Www@FoodAQ@Com

Not a great idea, you'll burn something or yourself!.
wine doesnt crystalize and will not give you that brown top look!.

Granulated white sugar is the best if you don't have a torch to burn the sugar simply place your creme brulee into the oven on broil watch it carefully and you'll have the same result!.Www@FoodAQ@Com

No, wine will just make a nasty tasting puddle on the top of your creme brulee!. The normal way of making the crust is to sprinkle some sugar on top and heat it with a torch until the sugar caramelizes!.Www@FoodAQ@Com

I don't think so!. Creme brulee has caramelized sugar on top and is made with cream and egg yolks!. I think wine might curdle the cream!.
