We like mackerel patties!.

Soda crackers, (saltines) finely crushed

1 sm!. onion, chopped fine
Salt & pepper to taste

Mix the mackerel, eggs, onion and seasoning!. Add enough of the cracker crumbs so the mixture will hold it's shape when you form it into a patty!. Form it into patties and fry in a skillet over medium heat in a small amount of butter or oil, until golden brown!. Flip, and brown the other side!.Www@FoodAQ@Com

Mix with mashed potato and any herbs or seasoning you fancy, to make fish cakes!.

Make a pizza base, top with the fish, plus anything else you have - tomatoes, mushrooms, onion, garlic, olives, basil, oregano, and grated, sliced or diced cheese!.

Put the fish into a casserole dish, add onion, garlic, tomato, seasoning and herbs!. Top with mashed potato!.

Serve them with a green salad or potato salad!.Www@FoodAQ@Com
