brown rice is a good staple, and it's good for leftovers
that with steamed vegetables or stir fried vegetables I have all the time!.
bean and rice burritos (you can add cheese if you want, but it's really bad for you)!. I use whole wheat tortillas and leftover brown rice
any kind of beans, I usually get lots of different cans, I ALWAYS rinse them though, a sifter or strainer is good for this, just dump them in and rinse away!.
whole wheat spaghetti (i like penne) with marinara sauce!. I always add some vegetables to my sauce, zucchini is good or you can puree stuff like spinach and kale and mix it in (you wont even notice)
oatmeal is really cheap and really healthy and filling

bagged salads are amazing!.
fat free italian dressing is good
thinly cut some eggplant, dip it in fat free italian dressing, then dip those in breadcrumbs then put them on a baking sheet!. Bake them at 400 degrees for 10 to 15 minutes (till crispy/brown) eat like that or with marinara is good!. You could even add some whole wheat pasta!.
add some raw nuts or seeds to salads for protein and omegas
Just remember: WHOLE wheat/grains only, brown rice, oats are all really good for you!.

1 1/2 cups whole wheat flour, 1/2 cup sugar, 1 t salt, 2 t baking powder, 3/4 c soy milk, 1/4 c applesauce, 1 cup frozen blueberries (add cinnamon with this combo so good) OR 1 cup sliced banana, OR 1 cup shredded carrot
Directions:
Preheat oven to 400F!. grease muffin pan/add muffin cups
mix dry ingredients, add wet ingredients and mix!. Fold in whatever filling you choose!. (stir in gently)
Pour into baking cups and bake for 25-30 minutes!. (makes 8)
for a salty fix:
rinse and dry kale, rip into chip size pieces, toss with a little olive oil and vinegar (optional), add a little bit of salt/sea salt
spread over baking sheet, roast for about 10 minutes or less at 375 degrees, or until crispy!.
OR I love those flat earth vegetable serving chips, they're so good
