Answers:
It's a type of Quark (or qvark) is a type of fresh cheese of Central European origin!. Dictionaries usually translate it as curd cheese!. It is soft, white and un-aged, similar to Fromage frais!.
It is not the same thing as cream cheese or cottage cheese and is distinctly different from ricotta - ricotta (Italian :: recooked) is made from scalded whey and Quark isn't cooked!

Only a few dairies in No!. America make it and in some areas it's known as 'baker's cheese'!.

It should be fine!. If it's too wet hang it over a strainer overnight in the refrigerator!.
