Check the label for what kind of flour it's made of!.

Under Italian law, dry pasta can only be made from durum wheat semolina flour!. This flour has a yellow colour!.

Particular varieties of pasta may also use other grains and/or milling methods to make the flour!. For example, pizzoccheri is made from buckwheat flour!.

In Italy, pasta is traditionally cooked ‘al dente’, Italian for ‘to the teeth’!.

Elsewhere, cheap dry pasta is made from other types of flour, but this produces a softer, brown coloured pasta, which cannot be cooked ‘al dente’!.

If you prefer your pasta ‘al dente’, use 100% durum wheat pasta!. If you prefer your pasta soft, use cheap pasta!.Www@FoodAQ@Com

I actually tend to buy ones made in Italy, preferably with Italian writing all over it so i can't understand a word except for the number indicating how long to cook it!.

I'm quite fond of "Seeds of Change" semi wholewheat organic pasta!.

I certainly consider it to be a cut above the usual array of dried pasta on the supermarket shelf!.

All dried pasta is pretty similar in taste, but the expensive stuff is pressed through brass dies & is therefore a bit rougher & therefore sauce sticks to it better!. It's not worth paying for fresh pasta - pasta is designed to be dried!.Www@FoodAQ@Com

Yes I would say most dried pasta tastes the same, but it depends on how long you cook it and what you add to it that makes the difference!.

Think I've tried about them all and now stick with the cheaper ones because I can't tell the difference once cooked and covered in sauce!Www@FoodAQ@Com
