Freezing the cake?!


Question: Freezing the cake!?
I read in the internet that decorators freeze their cakes until they need it!. What kind of freezer do they use!? Can we use the regular freezer in the fridge!? And this cake doesn't have any frosting on it yet, right!?

Yes your home freezer can be used!. We freeze ours for up to 8 weeks!. After that they seem pretty dry!. Let it cool completely after baking!. Pop it out of the pan and tuck it into a gallon size freezer bag or plastic wrap, or you can leave it in the pan!. We still cover them with plastic if we leave them in the pans (cheap aluminum throw aways) but we use them very quickly; with 3 days!. My uncle does flatten his and lay parchment paper over the top of them when he freezes his (owns a bakery)!. He also lines the bottom with parchment paper to keep it from sticking to the pan when he takes it out to decorate it!. His pans are all different shapes and sizes, of course, and are heavy metal, not the cheap stuff, but again, he only freezes in the pans for 3 days, no longer!. His freezer is a giant walk in that is lined with shelves, but it is about the same temp as a home freezer, minus the frost!. No, no frosting, although you can keep a frosted cake in the freezer as well, for short periods of time!. After all, when you buy Sarah Lee cakes in the store, they are frosted!. The top tier on a wedding cake is traditionally to be put in a baker's box and frozen, then eaten by the couple on their first anniversary!. Our icing was OK, but the cake tasted like sawdust! I have found that chocolate cake is easier to frost when it is frozen (fewer crumbs)!. It thaws in about and hour and a half and the icing will not slide off of it!. We also bake our sweet breads for Christmas and Thanksgiving around Halloween, then freeze them and they are fine, but freezing any sooner than that, again makes them very dry!.Www@FoodAQ@Com

Yeah you can use it in normal freezer!. You can use frosting neither or not!.
Anytime not more than 5 months!
