Question: Can I freeze redcurrants without cooking or blanching them first!?
Answers:
You do not have to cook or blanch red currants first before freezing them!.

Preparation – Select plump, fully ripe bright-red currants!. Wash in cold water and remove stems!.

Dry Pack – Pack currants into containers, leaving headspace!. Currants can also be frozen first on a tray and then packed into containers as soon as they are frozen!. Seal containers and freeze!.

Syrup Pack – Pack currants into containers and cover with cold 50 percent syrup, leaving headspace!. Seal and freeze!. Sugar Pack – To each quart (11/3 pounds) of fruit add 3/4 cup sugar!. Stir until most of the sugar is dissolved!. Pack currants into containers, leaving headspace!. Seal and freeze!.Www@FoodAQ@Com

No you don't have to just give a gentle washing (striggs and all), dry lightly on a clean cloth, or paper kitchen towel, and freeze on a flat tray!. Once frozen, the currants and striggs are then broken up and can be easily separated!. The currants can then be transferred to the permanent container!.Www@FoodAQ@Com

I did;-} just pick off the stems & sinse in a colander/seive!.
They're acidic enough, not to need blanching, to kill bacteria!.Www@FoodAQ@Com
