Are all vacuum-sealed jars cooked?!


Question: Are all vacuum-sealed jars cooked!?
My mom said all store-bought jars that are vacuum-sealed are cooked!. That releases steam and that is how they are sealed!. We were curious because I was wondering about a jar of Jalapeno's, and if they might contain Salmonella!. Can anyone verify my mom's statement!?Www@FoodAQ@Com

No they aren't!. Coffee is often vacuum sealed, and lots of other things!. But things that are canned (sealed while boiling) are essentially vacuum sealed because the steam when they are sealed displaces the air, and then condenses to leave a vacuum when it cools!. They are sterilized!. You can usually tell!. Jalapeno peppers!? If in fluid and under vacuum, likely they were!. Still, with a vacuum pump, it's not necessary to heat to get that 'pfffft' when you open the seal!. Usually, if it's wet, it was canned and heat sealed!. If it's under vacuum and dry, it was just vacuum sealed!.Www@FoodAQ@Com
