Question: As a pineapple ripens, does it get more sweet and less sour!?
in other words, if i prefer pineapple when its still somewhat sour, should i open it before it fully ripens!?
or is the sweet/sour balance unrelated to ripeness!?Www@FoodAQ@Com

As the pineapple ripens it gets sweeter!. If you don't want it so sweet, buy one that's not ripe!.!.!.but it will be very hard!.

Do not pick a ripe pineapple which you can tell by sweet smell & if top spikes come out easily!.
