I guess I'm confused by your question!.!.!. Besides the ingredients you mentioned, all mayonnaise has some type of acid in it!.!. whether it be lemon juice or vinegar!. However, I believe vinegar gives a consistent product!.Www@FoodAQ@Com

yeah mayonnaise has vinegar in it it helps to cut through the oil its the same with any dish that has a lot of oil/fat in it its to stop it been so rich it also helps to thicken it /emulsifyWww@FoodAQ@Com
