Well, a simple Bundt cake with a glaze of some kind, chocolate or fruit glaze is pretty, is pretty hardy in terms of lasting outside!. Obviously if it's an outside party and you are not sure if there is refrigeration nearby (is it at the park, at the boss's house etc), or if it's not possible to bring a cooler), it is always advisable to stay away, for foodsafe reasons, from anything dairy based, or with eggs, so no custards, no cakes with buttercream icings or cream fillings/icings, no cheesecakes etc!. Whipped cream desserts also no good!.
My favourite standby for an outdoor party is a gigantic fruit salad!. It may not sound ' exciting' but there are many ways to spice up a fruit salad and make it look pretty for presentation- use a melon baller for watermelons/canteloupes/honeydews, find exotic fruits at the grocery store, kiwis, mangos, papaya, star fruit (star fruit are more for garnish and looking pretty, they don't really taste like much), fresh coconut chunks, fresh pineapple, etc!. For grapefruit or oranges, cut the skin off as well (instead of just peeling an orange and pulling apart segments, slice off the bottom and top so you have a base for it to stand on, start slicing off the skin and pith0white stuff-down around the whole orange, from top to bottom, and then cut in slices horizontally- much prettier for presentation!.
Then you can keep a bowl of whipped cream flavoured with vanilla or cinnamon or something else, on ice, or in a whip cream dispenser (available at kitchen supply stores, or buy a can from the store and keep it on ice in a cute little bowl next to the fruit salad)!.
Things that are gooey like brownies are not advisable as they will be totally messy to handle!. If you are going chocolate route though, you can buy ready made individual tart shells (2 inch, sold in packages of 40 or 50 or however many in your local store), bake them off blind (empty), and then fill them with a bit of strawberry or other berry jam, and top up with chocolate ganache, and strawberries or other berries in season!. Or with caramel - these are nice because you can make a variety!.
Other options an assortment of bars- again, nothing too gooey/chocolatey, so no brownies or nanaimo bars!. Coconut bars, almond squares, marble cake squares/bars, any other number of squares/bars recipes that offer some variety!.
Any cakes you make, like the Bundt cake are great because they look fancy without having to put icing on them and you can simply decorate the plate and inside the middle with fresh fruit/berries!.
Good luck and have fun of course!Www@FoodAQ@Com
