Salt!.

When you buy a fish, they clean it completely so it tastes like nothing!.

When you season the bought fish, it tastes somewhat better since seasonings contain salt!.

When you cook a caught fish, the salt water + seasonings help bring out the taste a lot more!.Www@FoodAQ@Com
