Why is it bad to put a tomato in the fridge?!
I went to the farmer's market today and saw this huge sign above the tomato aisle that stated, "DO NOT PUT TOMATOES IN YOUR REFRIGERATOR"!. Why is this!?Www@FoodAQ@Com

They lose flavor due to chilling injury!. Chilling injury is a condition associated with warm-weather fruits and vegetables, including tomatoes, peppers, okra, cucumbers, etc!.
At low temperatures, tropical plants are unable to metabolize oxygen normally!. This leads to the various symptoms associated with chilling injury!. Remember that these are still living plant parts!.

If you don't use them right away supposedly they tend to get a little mealy!. Maybe I've just gotten used to it but mine our fine if I keep them in the fridge!. Who wants to keep tomatoes sitting around on counter until they get used!. Www@FoodAQ@Com

because cold air stops the ripening process tomatoes should be left at room temperature !. a tomato gives off whats called ethylene gas

I think they get soft and lose flavor, althought resturants i have worked at kept them in fridge, but what do you expectWww@FoodAQ@Com
