Mmmm!.!.!. I love tiger bread!
The topping is a paste made of rice flour and water, painted on with a brush after the bread has risen and just before it goes into the oven!.
The heat of the oven makes the paste dry out and also causes the bread to rise a little more!. That's why the crust separates into that lovely crackly pattern!.

Tiger bread's yummy flavour comes from sesame oil, which is mixed into the dough with the flour, water, yeast and sugar!. Most bread has some fat in the dough mix -- olive oil in ciabatta, for instance, and butter in breakfast rolls!. It gives it flavour and helps it keep better!.
