Some chicken is pumped with saltwater - supposedly to make the texture better, when it's cooked!. It makes the chicken a little tougher, more firm, less flaky!. It also acts as a preservative!.
Those are qualities that especially commercial users of chicken like a lot! The chicken keeps for longer, and the meat won't break up when cooked too long!.
They do it to supermarket chicken as well!. Mainly to prolong it's shelf-life!.
But they're cheating you - up to 10% of the chicken is saltwater! So when you look at the price per pound, remember, that you get 10% less chicken for your money!! Www@FoodAQ@Com
