What are some cheap and nutritious vegetables?!
I'm trying to eat better, but for vegetables I tend to eat a lot of roasted potatoes, which aren't bad but not the most nutritious, and it could get boring!. So I'm looking for some vegetables I might not have tried and aren't expensive (i!.e!. I'm not looking for something like fiddleheads) and maybe some simple cooking suggestions!. Well, you can roast just about ANY vegetables! Roasted cauliflower and carrots are great! Carrots are probably the cheapest veggie you can get!. Go to a farmer's market, and you can find seasonal veggies there: zucchini, tomatoes, etc!. Sliced, raw cucumbers are inexpensive, but don't peel them (most nutrients are in the skin) !.!.!.!. Baked sweet potatoes & yams have alot of vitamins!. You can find big bags of frozen green beans, which have virtually the same nutrients as fresh beans, but are much cheaper!.!.!.!.!.!. You can stirfry all kinds of greens: spinach, collard, mustard, collard & dandelion - or make spinach salads!.!.!.!.!.!.!.Www@FoodAQ@Com
The best thing to do is buy vegetables when they are in season!. For example, zuchinni, squash, corn, tomatoes, green beans, okra are summer vegetables!.Therefore they will cost less in the summer than in the winter when they have to be shipped in!. Winter vegetables are spaghetti squash, collard greens, cauliflower, broccoli, etc!. These will cost more in the summer and less in the winter!. In the summer if I crave winter vegetables, I buy them frozen!. They are almost as good as fresh and pretty economical!.
I like to cut zuchinni diagonally then pan saute in olive oil and butter, seasoned with salt and pepper!. For yellow squash I slice it and steam it with sliced onions!. Green beans also great steamed!. For cauliflower, I steam it, then put it in a food processor, then mix in heavy cream and butter, salt and pepper!. Carrots are always a good choice!. They've got plenty of vitamins!. also, celery!. Maybe not the most nutritious, but it takes more calories to chew the celery stalks than the entire vegetable has! Umm!.!. brussels sprouts are really nice if you bake them, same with collard greens!. Cauliflower and broccoli are good raw if you have them with a little bit of ranch dressing, or you could steam them and they are good that way also!. Cabbage is great if you steam it with a little bit of onions, and you could always stick to a simple, low calorie salad!.

i like making this simple but nutritious slaw!. 1 tomato and 1 cucumber cut into bits so that 2 or 3 pieces could fit on a spoon, add onion chopped small, and or a teaspoon of garlic, then low fat italian salad dressing, about 1/4 cup mix together and let sit over night so the juices can seep in!.!.!. mmmmm, so easy i make it at night and take it for lunch at work, i also sometimes add some cubed cheese something hard like cheddar; for calcium and protein!. i also mix it up by adding a serving of salsa (usially a serving is 2tablespoons)!.
