'Bramley' apples for apple tarts or do you use another type?!

Question: 'Bramley' apples for apple tarts or do you use another type!?
Answers:
Can't get Bramleys in Italy where we live!. We've planted a few Bramley trees on our farm, but it will be a couple of years before they start to produce!.

In the meantime, we use Granny Smiths for baking apples and they work reasonably well!. Handily, we've recently discovered that we have a Granny Smith tree growing in a rarely-visited corner!.

Life is hard for us!. ;->

the final cheat i use in my pies ~pour a tin of instant custard on top of the fruit before sprinkling topping on !.Www@FoodAQ@Com

You can use any type you like, but the only one to remain like any kind of REAL apple is the good old Bramley!
