Even totally crystallized honey is edible!. If you don't like the crystals, though, just put the open jar into a pan of water and heat it on the stove!. The crystals will 'melt' and then you can stir the honey and cool it, and it will look as good as new, fresh honey!. honey never goes bad - if it crystallizes just warm it up a few second in the microwave or run under hot water!.
