I suppose because a knife might flatten out the craters inside; and a fork would just go through them and keep the "holey" texture of the muffin!.!.!.!.!.!.Www@FoodAQ@Com

yes tx2 is right - it's to keep all the pores of the muffin open so the butter, or whatever you put on it can really get into it!.Www@FoodAQ@Com
