it has a distinct flavor that you can not get if it is not aged!. Tangy!? Probably a good analogy but not accurate!. Compare it side by side with a reg cheddar cheese and see!. also spend a couple extra bucks on extra sharp and see !.!.!.!.Www@FoodAQ@Com
