Big salads in a tupperware!. You can even get salad tupperwares at Walmart that have an attached fork!.

I make mine with spinach, frisee or arugula, then add:
Protein - Chickpeas, sweet pecans, cashews, baked or pan-fried tofu cubes, fake chicken (I don't eat most meat, but add chicken if you eat it/have it), flaked almonds, bocconcini mozzarella, feta cheese, chili & cheddar cheese!.

Other veggies and fruits - Try olives, roasted peppers, artichokes, peppers, chili peppers, mushrooms - either raw or marinated; or fruit like dried cranberries/cherries, dried apricot, slices of apples or berries, or slices of citrus fruit!.

Add a little dressing, and c'est fini!

I also like to make cold rolls using those cheap packs of rice papers from the Asian aisle in the grocery store - you just soak the rice paper, fill with stuff like mangoes, chicken, tofu, lettuce, cilantro, and carrots, then pack it with some peanut, hoisin or soy sauce!. Www@FoodAQ@Com
