I am a former chef from canada and for there size hormones would be useless, they are not as fat as a regular chicken or turkey and cook rater quickly and can be served whole or halves for a portion, you can stuff them and use anything you would for other poultry items, in fact they can dry out so basting them or rubbing some butter or margarine on them is nice, it helps with the browning!.

And turkey in the US and Canada are not injected with hormones, there diet may have some medicines in to prevent sickness during there brief life time, turkey that are in the store at Thanksgiving and Xmas in the US were eggs and hatched in March or May, there diet is rich in grain and other veg based materials and are bred to grow fast, chickens are not much more than 2-3 months old when the are marketed, so are cornish hens!.Www@FoodAQ@Com

Cornish Hens, are is in sodium and high in protein!. Although the total fat content is high, the amount of saturated fat is moderate!. So i'd yes they are fatty!.!.their also 1-2 lbs!. in size!.
Unless their organic, turkleys, chickens, etc!.etc!. ro to get hormones(grow faster), and i too have heard about antibiotics, along with being penned up, so they can't move!-disgusting!

Yes, most commercial chickens and Turkeys are injected with hormones!.
The reason!?
To keep the price down for the consumer!.
They grown faster and get heavier etc etc!.
Many people can't afford natural or free-range birds( unfortunately)
Bell & Even's!. Murry's etc are all about double to triple the price of conventional!.
So that's the reason for growth hormones!.
Cornish game hens are not as fatty as large chickens or capons!.
Most of the fat cooks out!.
